19 Freezer Meals Before Baby Comes

I am obsessed with freezer meal cooking. It is a game changer for busy moms. I start making these meals when I was 37 weeks pregnant to prepare us for when the baby arrives. Here I am 5 months later and I still have a couple left. They saved us and made it so much easier to take care of four kids/homeschool (thanks covid) and also live the new born life.

Week 37 is freezer meal week!!!

I am compiling 19 freezer meals together! I’m not gonna be the person that goes in depth with each meal and tells why their grandma cut their end of the roast.

First off there is no way I’m going to do this all in one day. I will show what I’m doing each day to slowly do some meals.

Day 1.

Pork roast!

I just picked up a big pork roast and I can make so many meals out of it. This is where I usually start and then I divide it up into baggies for different meals.

I love having sweet pork for Nachos, quesadillas, and burritos. It’s so convenient to pull them out and use.

I threw a roast in my instant pot to cook all day. (I use my instant pot as a crock pot) I’m cooking it on high for about 5 hours or when it shreds. You could do low for 8-10. All I did was pop it in with some salt, pepper, onion salt and garlic salt.

Make sure you you have it on venting when you do slow cooking. Again cook it plain then you can add the sauce later and make a couple different meals from it.

Sweet pork

6LB roast

Sauce:

2 cans elpato Mexican tomatoe sauce

1 cup brown sugar

4 cans tomato sauce (8oz)

I shred it and add the sauce, then I divide this into 4 bags, wait till they cool down before putting in the freezer. Then pop them in a crockpot for an hour on high and it will be ready to go.

I serve this as a burrito with rice, black beans, and what ever toppings you like. My favorite is the adding the

Home made tomatillo dressing:

1 packet dry butter milk ranch dressing mix

1 cup butter milk (I just do 1TB vinegar in a cup of milk)

1 cup mayo

2-3 tomatillos (peeped)

1 tsp. Cayenne pepper

Juice from 1 lime

¾ bunch of cilantro

1 tsp crushed garlic

Add all to a blender and chill

BBQ Pork

Since I cooked such a big pork roast I pulled out 3 cups of shredded pork and added some BBQ sauce to it. Then I can pull it out and serve it on buns with some tater tots.

BBQ Sauce Recipe

1 cup BBQ sauce

⅛ cup brown sugar

1 T apple cider vinegar

½ teaspoon garlic powder

¼ teaspoon onion powder

1 teaspoon liquid smoke

Add sauce to pork and freeze when cooled down.

Day 2

I like making the chicken meals

Grilled Chicken Marinade

¼ cup olive oil

2 T lime juice

2 T minced garlic

1 t cumin

Salt and pepper

Mix up marinade and add to raw chicken. You can marinate in the fridge all day. I choose to freeze them, to cook them I will pull them out in the morning and grill it. I love serving this over sweet potatoes and topping with a sour cream mixture of (lime, sour cream and garlic)

Creamy Italian Chicken

(Serving is for a small family I make two freezer bags of this doubled, or larger families I would double it)

2 chicken breasts

½ block cream cheese

1 can cream of chicken soup

½ packet of dry Italian seasoning packet

Pull out of freezer and crockpot high for 3 hours, add cup of cheese and serve over rice.

Chicken All Dressed Up

5 chicken thighs

1 cup ketchup

¼ cup brown sugar

2 T lemon juice

1 T dry mustard

1 teaspoon salt

Crockpot 6-8 hours on low and serve over rice

This one does get a little watery you can always add some more sauce if you need.

( this is for one serving, I doubled it and froze them)

Chicken Spaghetti

(Recipe is from @thecountryspoon) I was a family favorite

2 chicken breasts

½ small can of diced green chilies

¼ t cumin

¼ t garlic powder, salt, and pepper

½ can cream of mushroom soup

½ green pepper

½ red pepper

½ onion

½ celery stick

½ t parsley

Add all the ingredients to your bag. I doubled it and make two freezer bags. Cook high for 3 hours shred chicken and serve with half a box of spaghetti. Add cheese shredded cheese.

Last day I batched cooked 4 lbs of ground hamburger

Day 3

I cook a huge batch of ground beef, weigh it out and separate it into bags.

Hamburger casserole

1 can tomato soup

1 can corn

1 lb cooked hamburger

Teaspoon of salt and pepper

Pour all ingredients in a bag and you’re good to go.

Heat up and serve with half a box of noodles and a cup of cheese. Stir all together.

Beef and Cheese Pasta

(Recipe from @thecountryspoon)

1lb cooked ground beef

½ onion diced

½ t minced garlic

1 cup marinara sauce

½ can diced tomatoes

½ teaspoon basil, oregano, and Italian seasoning

1 TBS Worcestershire sauce

1 beef bouillon cube

1 cup spinach

1-2 hours on high add cooked penne pasta and mozzarella cheese. (I double it and make two small family meals) freeze once the meat has cooled down.

Kicked Up Meatballs

(This one I didn’t use the ground beef)

1 ½ lb of precooked frozen meatballs

Sauce:

10 oz orange marmalade

½ cup ketchup

3 T soy sauce

1 T hot sauce

1 T minced garlic

Mix up sauce and pour over meatballs. I divided this into 2 freezer bags since I have a smaller family. Serve over rice and with egg rolls. (Warm up in crockpot for 1-2 hours on high)

Those are all the recipes I worked on the whole week to help our family after we have the baby. The pork meal I was able to get 5 meals out of

(sweet pork I got 4 meals I can use the meat on nachos, burritos, or quesadillas)

All the other meals I did two of each… that puts me at a grand total of….. 19 meals!! Yahoooo.
